Respecting the morale of the legend: that all your actions have consequences, we made a whisky - black and innovative - that would live up to our belief of only dealing with the finest quality of spirits. We also wanted to make a whisky that intrigues both newcomers as well as experienced whisky drinkers for its colour, spices and balanced sweetness. The result of this became the Cú Dhub - "a whisky with a bite". COLOR: Solid Black NOSE: Sweetness, tobacco, burnt wood, root of liquorice. A cool impression tones forward. TASTE: Hot, notes of liquorice and vanilla tone forward. Sweet, smooth and well-balanced. FINISH: Good balance between sweet and a hint of hot strong coffee. A whisky with a bite. Yes, according to ‘The Scotch Whisky Order of 2009 – on Definition of Scotch Whisky, Paragraph 3.h, '...to which no substance other than water and spirit-caramel has been added.’ Thus only water and black caramel is added to this Black Whisky. Nothing else. Jim Murray's review of Cú Dhub Whisky Guru and connoisseur, Jim Murray, recently reviewed the Cú Dhub Back Single Malt Scotch Whisky in the 2013 edition of his whisky Bible. Here it gained praise and approval from Jim Murray's experienced pallet unlike it has done before. Appointing the Cú Dhub a score of 88, Murray writes: Nose, 22: Leopards may not change their sport...but Black Dogs evidently do. Some serious toffee apple at play here helped along by a few zingy spices. Taste, 22.5: have to say, I like the delivery. As silky textured as you'll ever find, there is a malt surge doused in burnt fudge. The sugars are delicate and a little bit of a treat. Finish, 21.5: Wins few prizes for its subtlety with its big, oily finish. But, again, there is enough in the complexity, and late spice especially, to make for an entertaining dram. Balance 22: not exactly a thoroughbred and you won't find it winning any prizes at Cruft's. But a malt which has improved beyond recognition in recent years and now even boasts a degree of enjoyable complexity. And you know what...not a single sulphur note in sight...
